Description

Limber de coco is a Puerto Rican frozen treat. I looked forward to it every time my grandfather visited me from Puerto Rico as a child. Deliciously creamy, refreshing, and easy to make! This will become a favorite in the house.

Ingredients
  • 1/2 Can Coconut Milk (14oz Can)
  • 1/2 Can Evaporated Milk (12oz Can)
  • 1/4 cup White Sugar
  • 1 tsp Vanilla Extract
  • 1/2 tsp Ground Cinnamon
Instructions
  1. Step 1

    Mix coconut milk, evaporated milk, sugar, vanilla extract, and cinnamon together in a bowl or blender until sugar dissolves and mixture is thoroughly combined.

  2. Step 2

    Pour mixture into ice trays or popsicle molds. Freeze 8 hours to overnight.
