Sausage French Toast Roll-Ups

cooked sausage links

milk

cinnamon

vanilla extract

unsalted butter (as needed)
Instructions

Roll each slice of bread flat with a rolling pin. Carefully cut off the crusts.

Place a sausage link at the edge of a slice of bread and roll up. Repeat with the remaining sausage and bread.

In a bowl, combine eggs, milk, cinnamon, and vanilla.

Dip each roll-up in the egg mixture, then pan-fry in a buttered skillet until all sides are golden brown.
